Marinaded Tomatoes

(Serve separately or as part of salad bar/antipasto)

3 firm ripe tomatoes, sliced 1/4inch thick
½ cup olive oil
2 tablespoons wine vinegar or lemon juice
1 tablespoon finely cut fresh basil or 1 teaspoon dried basil
¼ teaspoon finely chopped fresh garlic
1 teaspoon salt
Ground black pepper
2 tablespoons thinly sliced green onions
1 tablespoon finely chopped fresh parsley

Arrange tomato slices in slightly overlapping circles on a deep round plate or dish. Separately, mix well the oil, vinegar, basil, garlic, salt and pepper and spoon this over the tomatoes. Combine onions and parsley and sprinkle evenly over top. Let chill for a few minutes.
