Pretty and Delicious Avocado-Tomato Salad

1 ripe avocado, peeled and cut in small dice
1 teaspoon lemon juice
2 tomatoes, peeled, seeded and cut in small dice
2 tablespoons minced onion (purple preferred)
2 tablespoons finely chopped fresh parsley
1 teaspoon salt
Freshly ground black pepper
2 tablespoons red wine vinegar (yes, the red wine vinegar gives this salad its distinctive taste)
ΒΌ cup vegetable oil

In a dish with a close-fitting lid, place avocado, tomato, and onion. Separately, mix the vinegar and oil together well. Add salt, pepper, and parsley; pour over tomato avocado onions, stirring gently; do no mash avocados. Cover and Chill. Serve in a chilled pretty container or on salad plate.
